
For years I have been on a quest for the best chocolate chip cookie recipe. One that is tried and true: produces great tasting cookies and the same results time after time. When I think I've got it down, I go back and substitute new ingredients to learn the effect on my basic recipe. The latest substitute: Splenda. In an effort to save a few calories, I thought I'd try this sugar substitute. I've used Splenda in coffee and other drinks and think it's a pretty good sub for sugar. When baking my latest batch, I had no margarine on hand, so I also tried Crisco (not the butter flavor variety). I took a few pics and will give my "review" below....
I was very pleased with the texture and appearance of these cookies...they were just the right amount of crispy on the edges; they were chewy in the middle and I think the color and cracks on the top were pleasing to the eye. The taste is a different story...the no flavor Crisco is exactly that: flavorless. Next time I will try butter flavored Crisco. The Splenda was a good substitute for sugar (I'm hoping to find Splenda brown sugar soon). Overall: The use of Crisco created exactly the texture and appearance I was seeking, but the flavor left something to be desired. Recipe below....

Chocolate Chip Cookies
yield: 22-24 medium sized cookies
1 double stick Crisco (be sure to add 6 teaspoons of water per package directions for margarine substitution)
1/4 + 1/8 cup Splenda
1 cup packed light brown sugar
1 egg
1 1/2 teaspoons vanilla extract
Preheat oven to 325 degrees. Cream together above ingredients until the mixture is fluffy. Meanwhile, in another bowl, sift together the following ingredients:
1 1/2 teaspoons salt
1 1/2 teaspoons baking soda
3 cups all purpose flour
Add sifted ingredients to wet ingredients (with beater on low speed) by 1/4 cupfuls. Be sure not to overmix. Lastly, add 2 1/2 cups semisweet chocolate chips. Beat on low speed until just blended. Place batter on cookie sheet by spoonfuls and bake approximately 11-12 minutes. Remove to wire rack to cool.
