yes, we have no bananas....


...I used them all in these muffins...

Chocolate and Banana Muffins



125g wholemeal flour
125g plain flour
2 tbsp baking powder
125g unrefined sugar
125g dark chocolate, chopped
2 eggs
125ml vegetable oil
2 bananas

Heat oven to Gas 4 (350F). If you use a flexipan case for muffins, you won't need papers as nothing sticks to these pans.

Put the flours, baking powder, caster sugar and chocolate in a mixing bowl.

In another bowl, beat the eggs, add the oil. Chop the banana. Stir eggs, oil and banana into the dry ingredients quickly. Do not overmix.

Scoop into muffin pan and place in oven for 40 minutes. Remove, cool for 5 minutes before lifting out of muffin pan.

These muffins are very dense - almost like a banana bread. I let them set up in the flexi-pans for almost an hour before removing them as they were very moist. If you had one of these for breakfast, you'd be set til dinner! Beyond tasty!

Hooray something else to use banannas in! I'm getting a bit tired of making bananna bread all the time.
