Yesterday, I had a plan to go to the library and pick up a few cookbooks for inspiration one of which I hoped would be Big Fat Cookies by Elinor Klivans. On the way there, I got a bit distracted and ended up doing a little thrifting instead…and good thing. In the first thrift shop, I not only found Big Fat Cookies, but also, The Essential Chocolate Chip Cookbook (also by Klivans). How’s that for karma? I decided that I must make my birthday cake (which I will share with my twin sister) from the second book. Get ready for chocolate on top of chocolate on top of chocolate – literally.

This cake is decadent to say the least. I adapted the recipe slightly – I like to add a bit of coffee flavor to the cake (this recipe originally called for adding it to the frosting only). It’s perfect. I loved biting into the chocolate chips – they take on a truffle-like texture after baking.
If you’re looking for a rich, dense and extremely chocolaty cake, this recipe is for you. I hope you’ll come back and let me know if you’ve made it!
