Pumpkin and Sage Pot Pies

October is my favorite month – and it’s almost over.  It’s been a really busy couple of weeks, but I managed to find time to cook something using one of my favorite ingredients – pumpkin.

For this recipe, I used an heirloom variety of pumpkin known as Carnival. The colors of this pumpkin remind me of the changing leaves on the trees as they go from green to yellow.  This pumpkin has deep ridges all the way around, so be prepared for some extra cutting time!

Two notes about this recipe:
first, I think the pastry recipe is one of the best I have come across.  It’s easy to work with and really tasty.  Second, you’ll notice in the recipe that quantities are given by weight (with the exception of liquid ingredients). 
second, I would highly recommend weighing the ingredients rather than converting the quantities to cup measures – you will get a better result, particularly from the pastry crust.
